"Tea For Two"

To avoid scrubbing pans, eliminate greasing them. Cover pan with parchment paper instead.










In England, traditionally, afternoon tea is a ritual that includes scones served with clotted cream and jam. This custom has taken root in many up-scale restaurants here, sometimes with a little variation. They are very light and fluffy with a texture and flavor all its own. They can also be enjoyed with your morning coffee, as a snack and even dessert. They are easy to make but require very little handling. You will find them in many stores but nothing compares to the one's you make.


The following recipe is for my daughter Susan. These are her favorite, baked without currants.

classic scones


ingredients

  • 2 cups all-purpose flour
  • 2 tsps baking powder
  • 5 tbsps chilled butter or margarine / cut up
  • 1/2 cup milk or 1/2&1/2, or light cream
  • 1/8 tsp salt
  • 1/4 cup sugar / substitute 3 sweet 'nlow for diabetics
  • 1 large egg
  • 1 tsp vanilla
  • 1/4 cup currants (optional)
  • 1 egg mixed with 1 tsp water for glaze

instructions

  • Pre-heat oven to 425 degrees.
  • Grease bakng pan or cover with parchment paper.
  • In food processor mix dry ingredients.
  • Sprinkle diced butter on flour mix / turn processor on and off 14 times or use 2 knives scissors fashion, cut in butter until mix resembles course crumbs
  • Small bowl stir tog. vanilla, 1 egg, milk and currants (optional)
  • Add milk mix to flour mix
  • Stir only to combine
  • Floured hands, make ball
  • Lightly floured pastry board, pat dough into 8" diameter circle
  • Brush with egg glaze
  • Cut into 8 - 12 wedges or 3" rounds (I prefer 8).
  • Place on baking sheet
  • Bake 12 - 14 minutes (or until browned)
  • Cool on wire rack
  • Freezes well
  • Do not heat in microwave. Use oven or toaster oven.



raisin bran scones


ingredients

  • 2 cups all-purpose flour
  • 2 tsps baking powder
  • 1/2 cup butter / margarine / chill / cut up
  • 1/2 cup milk/ 1/2 1/2/ or cream
  • 1/2 tsp salt
  • 1/2 cup firmly packed dark brown sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla
  • 1 1/2 cup raisin bran cereal
  • 2/3 cup chopped walnuts / optional
  • 1 egg white mixed with 1/2 tsp water for glaze

instructions

  • Pre-heat oven to 375
  • Grease baking sheet
  • In bowl, mix together cereal & milk / let stand 10 minutes
  • Add eggs & vanilla
  • In food processor mix dry ingredients
  • Sprinkle butter over flour / turn processor on and off 14 times or use 2 knives scissors fashion, cut in butter until mix resembles course crumbs
  • Add cereal mix to flour mix
  • Stir only to combine
  • Floured hands, knead nuts into dough
  • Lightly floured hands, pat dough into 9" diameter circle on baking sheet
  • Brush top with egg glaze
  • Cut into 8 wedges
  • Bake 30 - 35 minutes
  • Cool baking sheet on wire rack 10 minutes
  • Transfer scones to wire rack / recut into wedges
  • Store in airtight container or freeze



Irish soda bread scones


ingredients

  • 2 cups all-purpose flour
  • 5 tbsps butter / margarine / chill / cut up
  • 1/2 cup buttermilk
  • 1 1/2 tsps baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp caraway seeds
  • 1/2 tsp salt
  • 3 tbsps firmly packed light brown sugar
  • 1 large egg
  • 1/2 cup chopped walnuts
  • 1/2 cup gold or dark raisins
  • 1 egg yolk with 1/2 tsp water for glaze

instructions

  • Pre-heat oven to 375
  • Grease baking sheet
  • In food processor mix dry ingredients
  • Sprinkle butter on flour / turn processor on and off 14 times or use 2 knives scissors fashion, cut in butter until mix resembles course crumbs
  • Small bowl stir buttermilk & egg
  • Add milk mix to flour mix
  • Stir only to combine
  • Lightly floured hands, knead in nuts & raisins
  • Lightly floured hands, pat dough into 9" diameter circle on baking sheet
  • Brush with egg glaze
  • Cut into 8 wedges
  • Bake 20 - 25 minutes
  • Cool baking sheet on wire rack 10 min
  • Transfer scones to wire rack
  • Recut into wedges
  • Store in airtight container or freeze



chocolate chip scones


ingredients

  • 2 cups all-purpose flour
  • 2 tsps baking powder
  • 1/2 cup butter / margarine / chill / cut up
  • 1/4 cup orange juice
  • 1/2 tsp salt
  • 1/3 cup sugar / replace with 4 sweet'nlow
  • 2 large eggs
  • 1 tsp vanilla
  • 3/4 cups mini semisweet choc chips
  • 1/2 tsp grated orange peel / optional
  • 1 egg white mixed with 1/2 tsp water for glaze

instructions

  • Pre-heat oven to 425
  • Grease baking sheet
  • In food processor mix dry ingredients including orange peel
  • Sprinkle butter over flour / turn processor on and off 14 times or use 2 knives scissors fashion, cut in butter until mix resembles course crumbs
  • In small bowl, mix eggs, orange juice and vanilla
  • Add egg mix to flour mix
  • Stir only to combine
  • Lightly floured hands, knead in choc chips
  • Lightly floured hands, pat dough into 8" diameter circle on baking sheet
  • Brush top with egg glaze
  • Cut into 8 wedges
  • Bake 20 - 25 minutes
  • Cool baking sheet on wire rack 10 minutes
  • Transfer scones to wire rack / recut into wedges
  • Store in airtight container or freeze

For chocolate scones, eliminate orange juice, orange peel, 1 egg and choc chips. Replace with 1/2 cup milk and 3/4 cups of cocoa.
